Everything but the kitchen sink, is a common term for cleaning out the refrigerator at my house! During the summer vegetables often go bad before we can use them all. My solution? Roast them! If you have children you could even make a game out of it! How many vegetables can we find? This weeks collection included the following for me, jalapeños, sweet potatoes, onions, zucchini, kale and some thyme and rosemary from my garden. I roasted the vegetables low and slow with foil covering them for about 40 minutes then added the kale and herbs. It is not only delicious its also very healthy and filling!
