Flourless Pumpkin Power Cookies

Hello my friends! Fall is finally here, yay! I found a recipe that sounded great however, after many changes it morphed into my own creation by the time I was done! I am always looking for a healthy snack that fits into a few categories that are important to me.  First, it taste good…I mean hello, I am human! Second, it has good for you ingredients. Third, it’s not too time consuming to make. This recipe hits all three! The tartness of the dried cherries and sweetness of the mini chocolate chips are a great combo. The fats are also good for you, between the nuts, seeds, coconut oil and eggs its a plethora of omega 3 fatty acids and unsaturated fats. That means it’s good for your heart and good for your gut.  

Here is the recipe! 

INGREDIENTS

1/2 C Pumpkin Puree

1/4 C Coconut Oil melted

1/4 C Honey

1 t     Pumpkin Pie Spice

1/2 t  Sea Salt

2       Eggs

2 C    Nuts chopped (I used pecans and almonds)

1/4 C Pumpkin Seeds

1/4 C Sunflower Seeds

1/2 C Tart Dried Cherries

1/2 C Mini Chocolate Chips (I used Enjoy Life non-dairy chocolate chips)

INSTRUCTIONS~

  1.  Preheat oven to 350 degrees
  2. Whisk together pumpkin puree, coconut oil, honey, eggs, sea salt and pumpkin pie spice in a medium bowl until blended.
  3. Add in chopped nuts, pumpkin seeds, dried cherries and mini chocolate chips. Stir until combined. 
  4. Drop large spoonfuls onto lightly greased cookie sheet. Bake for 15 minutes. Let cool for 10 minutes.
  5. Enjoy or refrigerate!!!
