Looking for an easy lunch that is filled with good food? This is one of my recent favorites! I had it at a restaurant not long ago and fell in love. I went home and tweaked it a little and this yummy dish is the result. Overflowing with protein, this is one filling bowl of deliciousness!
Here is the recipe::
1 cup of water
1/2 cup rinsed quinoa
1/2 cup blueberries
1/4 cup pecans (substitute your favorite nut if youโd like)
Pinch of salt
Cook the quinoa as directed, let it cool for 5 minutes, pour in the blueberries and pecans. Nosh!
