Taking on 2020 – One Healthy Step at a Time – Part 3

Hello my friends, I hope you all are doing well and finding hope that spring will soon be here! I have seen a huge amount of birds pouring into my area over the last few days. I mean they donโ€™t have huge brains and donโ€™t always make the wisest decisions but I feel like this is one of the things they instinctively know.

Okay, on to another subject I love talking about. Food! If you know me you know I donโ€™t miss meals and breakfast is my favorite meal of the day. Not criticizing those of you that choose to fast or have another routine, we have to find what works best for our bodies and the time we have in a given day. But, this works well for me! 

In order to make the most out of my breakfast I food prep once or twice a week. I know youโ€™ve heard all about meal prepping, and I do that here and there but, what really works for me is to have various things I eat regularly and enjoy eating ready to go in the fridge so I can just throw something together. Again, you do what works best for you! But, after talking about my breakfast routine over the last few months I have had a lot of questions. So, I thought I would share! The one standard in my breakfast is an egg, itโ€™s the non negotiable for me. They have protein, which helps keep me full, they are loaded with vitamins and minerals as well as healthy fat. Side note make sure you look for good quality eggs. Now the rest is always up in the air depending on what they have at my local market. Sometimes I even use frozen Brussels sprouts or squash if they are out of fresh. 

Here is how it goesโ€ฆ

Olive or avocado oil warmed up in a skillet, I then add onions and or garlic. Next step add the veggies as you can see this morning I had sweet potatoes, mushrooms and Brussels sprouts . I let that warm up for a minute or two then throw an egg on top and a hand full of raw spinach. Talk about a meal that gets it all in! You have color, excitement (for your eyes and your mouth), and a nutritious start for your day. 

Just one more way to plan for your week so cooking a good and healthy meal doesnโ€™t take so long you get the hungry eyes and eat anything you can find. Be prepared! 

Another side note, I also do this with other meals of the day, I typically have some chicken and rice ready to go and then I go crazy with my veggies, both raw and cooked.
