Chickpea Salad

This is one of my favorite summer salads however, it’s great anytime of the year. I do adore using cilantro from my garden in this, it adds an extra dose of yumminess!

1 (29oz) Can of Chickpeas/Garbanzo beans rinsed and drained

1/2 Red Onion finely chopped

3 ribs of Celery with greens finely chopped

1 Clove of Garlic minced

2 T. Fresh Cilantro finely chopped

2 T. Red Wine Vinigar 

2 T. Fresh squeezed lime juice

2 T. Extra Virgin Olive Oil

1 t. Himilayen Pink Salt

1 t. Pepper

Combine all ingredients in a large bowl and stir well. 

This is a great side dish or served with fresh baby spinach. It taste great fresh or as leftovers! Enjoy for up to 5-6 days.
